Bok Choy is a variety of Chinese cabbage. It has long, white, celery-like stalks and large, dark green leaves and its flavor is much like mild cabbage.

Stir a cup of this salsa into sour cream or unflavored yogurt and use it as a sauce with pork or chicken.
Yield: 2 1/2 cups

- 1 1/2 cups chopped fresh apricots
- 3/4 cup chopped green bell pepper
- 1 3/4 cups seeded chopped cucumber
- 1/4 cup sliced green onion

- 1 jalapeno chile, seeded and finely chopped
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon finely chopped fresh cilantro
