To mince fresh ginger, pound the peeled ginger with the back of a knife blade until the pulp separates, leaving the threads behind. Then mince as any vegetable.

- 1 3-oz. package lime gelatin
- 1 3/4 cups boiling water
- 1/4 cup lemon juice
- 1 large ripe avocado

- 1 cup cream-style cottage cheese
- 1/4 teaspoon salt
- 1 can sliced pineapple (8 slices)

- Dissolve gelatin in boiling water. Add lemon juice, and chill until syrupy.
- Mash avocado with fork.
- Stir in cottage cheese and salt. Fold avocado mixture into chilled gelatin.
- Pour into lightly oiled individual molds. Chill until firm.
- Unmold on top of a pineapple slice.
- Garnish with chicory.
