          To mince fresh ginger, pound the peeled ginger with the back of a knife blade until the pulp separates, leaving the threads behind. Then mince as any vegetable.

          • 1 3-oz. package lime gelatin
          • 1 3/4 cups boiling water
          • 1/4 cup lemon juice
          • 1 large ripe avocado
          • 1 cup cream-style cottage cheese
          • 1/4 teaspoon salt
          • 1 can sliced pineapple (8 slices)
          • chicory

          [edit] Directions

          1. Dissolve gelatin in boiling water. Add lemon juice, and chill until syrupy.
          2. Mash avocado with fork.
          3. Stir in cottage cheese and salt. Fold avocado mixture into chilled gelatin.
          4. Pour into lightly oiled individual molds. Chill until firm.
          5. Unmold on top of a pineapple slice.
          6. Garnish with chicory.
