Beer batter will fry crisper and lighter if allowed to stand awhile before mixing. This gives the flour granules time to soften and absorb the liquid.

- 1 pound bacon
- 1/2 to 3/4 cup finely chopped green onion

- 1/2 cup mayonnaise
- 24 cherry tomatoes

Wash tomatoes, and remove stems. Cut off tops of tomatoes; scoop out the insides. Invert on paper towels to drain for 30 minutes. Fry bacon until crisp; drain on paper towels. In a medium bowl, mix crumbled bacon, onions and mayonnaise. Fill tomatoes with mixture. Refrigerate for several hours, or overnight. Makes 24 appetizers.
