          The type of chiles you use will determine the final flavor. Experiment with different kinds or combinations of chiles. But this is a basic recipe for preparing a salsa using dried chiles.

          Yield: 4 servings

          • 6 large dried chiles (such as Morita, mulatto or guajillo)
          or
          • 15 small dried chiles (such as jalapenos or Serrano)
          • 1/2 medium onion
          • 1/4 cup vinegar
          • 1 small clove of garlic
          • salt
          • vegetable oil

          1. Wash the chiles in water and discard the seeds and threads of chiles. Let stand in water at least 2 or 3 hours or all night. (If you do not have time, let the chiles soak in warm water for at least 30 minutes.)
          2. Grind the chiles and other ingredients.
          3. In a saucepan put a little vegetable oil. When it warms, add the salsa and cook 30 minutes or more. (The flavor of the vinegar needs to lighten or disappear. Add water, if needed.
          4. When cooked, you can use for chilaquiles, enchiladas, and eggs.
